Apple Cinnamon Muffins

Chunks of apple and the cinnamon make these delicious muffins with a great texture.

Bake at 400F for 20 - 25 min. Makes 24 muffins.

Ingredients

Dry

  • 3 cups all purpose flour
  • 1.5 cups white sugar
  • 4 tsp baking powder
  • 2 tsp ground cinnamon

Wet

  • 3/4 cup vegetable oil
  • 2 eggs
  • 3/4 cup milk
  • 2 cups apple, peeled, cored and chopped (3 - 4 regular sized apples)

Directions

  • Mix dry ingredients, and then mix in wet.
  • Fold in chopped apples.
  • Allow batter to rest for 15 minutes while preheating oven to 400F.
  • Prepare muffin tin with oil, butter, or liners. Spoon batter into muffin tin.
  • Bake at 400F for 20 - 25 minutes, turning at 10 minutes.
