Butternut Squash & Sweet Potato Soup

Vegetarian, delightful soup that is delicious any time of year.
Ingredients
- 1 onion
- 6 cups veggie broth
- 2 1/2 cups butternut squash, peeled, seeded, and cubed
- 2 cups sweet potato, peeled and diced
- 3 carrots, peeled and sliced
- 1 can cannellini beans
- 1/4 teaspoon salt
Directions
- Add all ingredients to the slow cooker, and secure the lid, cook on low for 6 hours or high for 3.
- Alternatively, 30 minutes in the Instant Pot.
- Blend to make a smooth soup.
