BBQ Baked Beans (Instant Pot)

Tangy sweet beans take very little time in the instant pot.

Ingredients

  • 16 ounces dry navy or pinto beans
  • 8 cups water
  • 1 teaspoon salt
  • 8 slices bacon
  • 1/2 yellow onion , finely chopped (or 2 Tbsp dry mined onion)
  • 1/2 red or green bell pepper , cored, seeded, and finely chopped (optional)
  • 2/3 cup honey barbecue sauce store-bought or homemade
  • 1/2 cup ketchup
  • 1 Tbsp yellow mustard
  • 1/4 cup cider vinegar
  • 1 tsp liquid smoke
  • 1/2 cup light brown sugar
  • 1/2 cup water

Directions

  • Add 16 oz beans, 8 cups water and 1 tsp salt to instant pot.

  • Cook on high pressure for 20 minutes. Allow the pressure to naturally release for 20 minutes.

  • Remove lid and pour beans into a colander/strainer. Rinse with cold water. Set aside.

  • Set Instant Pot to saute setting.

  • Add 8 slices bacon and saute for a few minutes until it starts to get golden brown, tossing and scraping down the bottom of the pot often.

  • Drain some of the grease.

  • 2 Tbsp minced onion and cook until tender (optional, add 1/2 of red pepper).

  • Turn IP off.

  • Mix 2/3 cup honey bbq sauce, 1/2 cup ketchup, 1 Tbsp mustard, 1/4 cup vinegar, 1 tsp liquid smoke and 1/2 cup brown sugar in a bowl or the IP.

  • Add to the pot and stir well to combine.

  • Add 1/2 cup water and beans.

  • Secure IP lid, close steam valve and cook on high pressure for 15 minutes. Natural release the pressure.

  • If the sauce still seems thin, turn on Saute mode and boil some of the liquid off, stirring frequently until the sauce thickens.
