Chickpea Orzo Soup

Filling vegetarian soup.
Ingredients
- 1 Tbsp vegetable oil
- 1 Tbsp minced onion rehydrated
- 1 cup diced carrots
- 3-4 tsp minced garlic
- 1 cup dry orzo pasta
- 1/2 yellow pepper, diced
- 1 can garbanzo beans (chickpeas, 15.5 oz)- drain and rinse
- 1 can fire roasted diced tomatoes (15.5 oz can)
- 6 - 8 cups vegetable broth
- 1 Tbsp Italian Seasoning
- 2 tsp basil, 1 tsp oregano, 1/2 tsp thyme, some rosemary
- Salt and Pepper per taste
- 1 Tbsp lemon juice
Directions
- Warm 1 Tbsp vegetable oil in large pot.
- Add 1 Tbsp minced onion, and 1 cup diced carrots
- Cook for 4 - 5 minutes until the carrots are starting to get a little tender.
- Add 3 - 4 tsp minced garlic and 1 cup dry orzo pasta.
- Stir frequently over medium heat to toast the orzo until garlic is fragrant.
- Add 1/2 yellow pepper, 1 can drained and rinsed garbanzo beans, 1 can fire roasted tomatoes, 1 Tbsp italian seasoning
- Stir together with everything else.
- Add 6 - 8 cups vegetable broth and 1 Tbsp lemon juice.
- Bring to a boil, reduce heat and simmer for 15 minutes.
- Serve in a bowl.
