Cinnamon Buns

Delicious cinnamon buns, based on a Cinnabon copycat recipe.

This recipe assumes you are using a stand mixer (like a Kitchenaid) with a paddle and dough hook attachment. Adjust accordingly if you don’t have that.

Equipment

  • 9 x 13 inch baking pan
  • Stand mixer with paddle and dough hook
  • Large flat surface to roll dough out on
  • Rolling pin
  • Spatula
  • Microwave, or some other way to heat milk, melt butter.
  • Oven to bake the rolls in.

Ingredients

Dough

  • 1 cup of milk warmed to 110 F
  • 1 packet or 2 1/4 tsp of fast rise yeast
  • 1/3 cup salted butter, melted and cooled
  • 1/2 cup white sugar
  • 2 eggs at room temperature
  • 1 tsp salt
  • 4 cups bread flour

Filling

  • 1/2 cup butter, melted and cooled
  • 2 Tbsp ground cinnamon
  • 1 cup brown sugar, packed

Baking

  • 1/2 cup heavy cream; OR
  • 1/3 cup whole milk + 2 Tbsp butter

Directions

Dough

  • Warm 1 cup of milk to 110 F (1 minute in microwave works for me).
  • Add your 1 packet or 2 1/4 tsp of fast rising yeast.
  • If using lactose free milk, also add 1 tsp white sugar to the milk and yeast mixture.
  • Let the yeast and milk mixture sit for 5 minutes until it becomes foamy with bubbles.
  • Mix milk mixture, 1/3 cup of melted and cooled butter, 1/2 cup white sugar, and 2 eggs (room temperature) in a mixing bowl.
  • Add 1 tsp of salt, and 4 cups of bread flour to the mixing bowl.
  • Mix in the flour with the paddle attachment until it is crumbly.
  • Scrape any dough off the paddle, and allow the mixture to sit for 5 minutes.
  • Switch to a dough hook, and knead on low for 5 minutes.
    • Dough should be stretchy and soft.
  • Scrape the dough away from the sides of the bowl, spray with oil or cooking spray so the dough won’t stick, and then cover and let rise until doubled (~ 30 minutes).

Filling

  • Melt 1/2 cup of butter, allow to cool to room temperature.
  • Mix in 2 Tbsp of cinnamon and 1 cup of packed brown sugar.

Combine Them

  • Roll dough out onto a lightly floured surface until it is a large rectangle, roughly 1/4 inch thick.
  • Spread the filling over the dough (a spatula works well).
  • Roll the dough tightly along the long edge.
  • Cut into 12 rolls.
  • Place the rolls edges up into the 9 x 13 baking dish.
  • Cover and allow them to rise while the oven warms to 375 F.
  • Pour 1/2 cup of cream over the buns, or melt 2 Tbsp of butter in 1/3 cup of whole milk and pour over the buns.
  • Bake buns for 25 minutes.
