Carrot Cake

A decadent carrot cake appropriate for any occasion.

Ingredients

  • 3 eggs

  • 1 1/2 cups white sugar

  • 1 1/4 cup oil (canola or vegetable)

  • 3 cups flour

  • 2 tsp baking soda

  • 2 tsp cinnamon

  • 1 tsp salt

  • 1 tsp nutmeg

  • 2 cups grated carrot

  • 1 cup crushed pineapple (not drained!)

Directions

  • Preheat oven to 350 F.

  • Cream together 3 eggs, 1 1/2 cups white sugar, 1 1/4 cup oil.

  • Mix together 3 cups flour, 2 tsp baking soda, 2 tsp cinnamon, 1 tsp salt, 1 tsp nutmeg.

  • Add dry mix to the previously creamed eggs, sugar and oil and mix well.

  • Add 2 cups grated carrot and 1 cup crushed pineapple and mix well.

  • Grease large tube pan very well!

  • Add cake mix, and bake at 350 F for 1 hour.

This makes a large cake. Cream cheese icing goes great, I recommend doubling that recipe to cover this cake.
