Carrot Cake
A decadent carrot cake appropriate for any occasion.
Ingredients
3 eggs
1 1/2 cups white sugar
1 1/4 cup oil (canola or vegetable)
3 cups flour
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 tsp nutmeg
2 cups grated carrot
1 cup crushed pineapple (not drained!)
Directions
Preheat oven to 350 F.
Cream together 3 eggs, 1 1/2 cups white sugar, 1 1/4 cup oil.
Mix together 3 cups flour, 2 tsp baking soda, 2 tsp cinnamon, 1 tsp salt, 1 tsp nutmeg.
Add dry mix to the previously creamed eggs, sugar and oil and mix well.
Add 2 cups grated carrot and 1 cup crushed pineapple and mix well.
Grease large tube pan very well!
Add cake mix, and bake at 350 F for 1 hour.
This makes a large cake. Cream cheese icing goes great, I recommend doubling that recipe to cover this cake.
